Avocado Corn Salsa

This chunky salsa has the flavors of guacamole and can be as mild or spicy as your like. With a crisp Sauvignon Blanc, this dip is perfect for any get together, just make sure to serve with plenty of tortilla chips.

Yield: 8 Servings

Ingredients

1 cup corn, cut from a cob
1 Tablespoon olive oil
2 small avocados peeled, pitted and diced
1 medium tomato, diced
1 teaspoon cumin powder
1 teaspoon lemon juice
1/2 cup cilantro, chopped
2 green onions, chopped
salt to taste
hot sauce, optional

Method

Cook corn in oil in a heavy skillet over moderate heat, stirring until cooked through about 10 minutes. Let cool. Combine the rest of the ingredients in a bowl and mix gently. Add the cooled corn and season to taste with salt and hot sauce.
