Tandoori Style ChickenCooking at a high temperature and broiling helps to give the authentic taste of chicken cooked in a tandoori oven. Be sure to use fresh paprika which adds color and flavor to the dish. Yield: 4-6 servings
Ingredients1 broiler fryer chicken, about 3 1/2 - 4 pounds
MethodHeat oven to 500 degrees. Cut the chicken into quarters, remove the wings, all of the skin and any visible bits of fat. Make 2 inch-wide slashes about 1⁄2 inch deep all over chicken pieces. Combine the yogurt wit the garlic, ginger, salt, Tabasco, paprika, coriander and cumin. Mix thoroughly. Rub the marinade into the chicken and let marinate for 30 minutes at room temperature. Line a baking sheet with foil; place a baking rack directly on top of the foil and lightly oil it to prevent sticking. Arrange chicken pieces on top of the rack in a single layer. Bake, rotating baking sheet once, until cooked through, about 25 - 30 minutes. Remove pan from the oven and transfer to the broiler. Broil 3 minutes to char slightly.
