Soy Maple Roast SalmonThe acidity of the fresh lemon helps to balance the salty soy sauce and sweet maple syrup. This salmon is also good cold added to sandwiches or salads. Yield: 4 servings
Ingredients2 cloves garlic, finely minced or pressed
MethodPreheat oven to 450°F. Line a broiler pan with foil and lightly oil. Meanwhile gently simmer soy sauce, maple syrup, lemon juice and garlic in a small saucepan over moderate heat about 3 minutes or until a thick glaze. Place salmon, skin side down, on foil-lined broiler pan. Brush salmon generously with the glaze. Let marinate at room temperature for 10 minutes, then brush with more glaze and roast salmon in middle of oven 10 minutes per pound or until almost cooked through. Remove from oven and tent with foil and let rest for 5 minutes or broil until cooked to desired doneness.
