Candelaria Cabernet Franc 2006

Soy Maple Roast Salmon

The acidity of the fresh lemon helps to balance the salty soy sauce and sweet maple syrup. This salmon is also good cold added to sandwiches or salads.

Yield: 4 servings

 

Ingredients

2 cloves garlic, finely minced or pressed
3 Tablespoons soy sauce
2 Tablespoons maple syrup
2 Tablespoons fresh squeezed lemon juice
1 1/2 lb piece center-cut salmon fillet with skin, approximately 1 1/2 inches thick


 

Method

Preheat oven to 450°F. Line a broiler pan with foil and lightly oil. Meanwhile gently simmer soy sauce, maple syrup, lemon juice and garlic in a small saucepan over moderate heat about 3 minutes or until a thick glaze.

Place salmon, skin side down, on foil-lined broiler pan. Brush salmon generously with the glaze. Let marinate at room temperature for 10 minutes, then brush with more glaze and roast salmon in middle of oven 10 minutes per pound or until almost cooked through. Remove from oven and tent with foil and let rest for 5 minutes or broil until cooked to desired doneness.
