Smoked Salmon Flatbread with Cucumbers & ChivesThis cheesy flatbread topped with smoked salmon can be served as a light lunch or as an appetizer. Other topping options include capers, minced red onion or dill. Yield: 4 Servings
Flatbread1 cup flour1 1/2 teaspoons baking powder 1/2 cup parmesan cheese, grated 1 Tablespoon olive oil 1/2 cup boiling water Additional olive oil for cooking
Topping4 ounces goat cheese4 ounces smoked salmon, thinly sliced 1 cup cucumber, thinly sliced 3 Tablespoons chives, minced
MethodIn a mixing bowl combine the flour, baking powder and parmesan cheese. Add the olive oil and boiling water and quickly stir to form a soft dough. Divide the dough in half and roll each half on a floured surface into roughly a 8 1/2 inch round. Heat a non-stick pan or flat griddle over medium high heat. Drizzle with about 2 teaspoons of olive oil and when hot, cook the flat bread, about 3 minutes on each side or until brown in spots. Place flatbread on a clean work surface. Sprinkle on crumbled goat cheese and allow it to melt slightly. Spread with a spatula or knife. Top with smoked salmon, cucumber and chives. Slice each round into 8 triangular wedges.
