Roasted Sausages with Red GrapesThis entree is as easy as it is delicious. Serve with French bread or roast potatoes and a green salad for quick midweek meal. Yield: 4 Servings
Ingredients4 - 8 sweet Italian sausages, about 5-6 ounces each
MethodPreheat the oven to 475 degrees. Heat a heavy skillet, preferably cast-iron, over moderate heat until hot then add one tablespoon of the oil. Place the sausages in the skillet, and cook them and turn them until well browned, about 8 minutes total. While the sausages are cooking, remove the grapes from their stems, rinse and drain. Slice the red onion into thin wedges. When the sausages have browned, place them in a baking pan. Dump the grapes and onion wedges on top of and around them and drizzle with the remaining olive oil. Bake for 25 minutes, or until the onions and grapes are tender and sausages cooked through.
