Peach & Prosciutto Salad
This summer salad is best when peaches are ripe and sweet. You can also serve the peach and prosciutto with no salad if you prefer, just drizzle it with a little balsamic vinegar.
Yield: 4 servings
Ingredients – Salad
2 large fresh large peaches, peeled and pitted
4 slices prosciutto
4 cups mixed greens, or arugula
3 Tablespoons olive oil
2 Tablespoons lemon juice
1/2 teaspoon sugar
salt and pepper to taste
Method
Whisk together the olive oil, lemon juice, sugar, salt and pepper. In a mixing bowl toss the salad greens with enough dressing to coat. Slice each peach in about 6 wedges. Portion the greens on each plate. Top with wedges of peach, in a sunburst pattern. Rip the prosciutto slices in shreds and pile in the center of the peaches and greens.
