Mac ‘n ManchegoThe Spanish flavors of Manchego cheese and chorizo spice up this comfort classic. This dish cooks up quickly in one pot. Yield: 4 servings Ingredients2 Tablespoons unsalted butterMedium onion, chopped 2 Tablespoons flour 1 teaspoon salt 3 cups milk 8 ounces elbow macaroni 1 1/2 cups (6 ounces) Manchego cheese, grated 1/4 cup dry Spanish chorizo, diced MethodHeat the butter in a large saucepan over medium heat. Add the onions and saute over medium-low until golden, about 8 minutes. Add the flour and salt and cook for one minute, stirring constantly. Add the milk and and stir to combine. Bring sauce to a simmer then add macaroni and stir to keep from clumping. Reduce heat to low and cover. Stir occasionally to keep from sticking to the bottom of the pot.
