Mac 'n Manchego

The Spanish flavors of Manchego cheese and chorizo spice up this comfort classic. This dish cooks up quickly in one pot.

Yield: 4 Servings
Prep Time: 10 minutes | Cook Time: 18 minutes

Ingredients:

• 2 Tablespoons unsalted butter
• Medium onion, chopped
• 2 Tablespoons flour
• 1 teaspoon salt
• 3 cups milk
• 8 ounces elbow macaroni
• 1 1/2 cups (6 ounces) Manchego cheese, grated
• 1/4 cup dry Spanish chorizo, diced

Method:

• 1.

  Heat the butter in a large saucepan over medium heat. Add the onions and saute over medium-low until golden, about 8 minutes. Add the flour and salt and cook for one minute, stirring constantly. Add the milk and and stir to combine. Bring sauce to a simmer then add macaroni and stir to keep from clumping. Reduce heat to low and cover.

  Stir occasionally to keep from sticking to the bottom of the pot. Cook for about 8 minutes or until macaroni is al dente. Remove pan from the heat and add the cheese and chorizo, stir to combine evenly. Serve.
