Lemon Tea Fish with BroccoliniMaking your own green tea salt is easy and fun. Use green tea salt on fish, baked potatoes and even eggs. Yield: 4 Servings
Ingredients1 bag of green tea1/2 teaspoon kosher salt 1/4 teaspoon sugar 4 fillets of halibut or other firm white fish 2 lemons 4 Tablespoons butter 1 bunch broccolini, steamed
MethodCombine the contents of tea bag, kosher salt and sugar in a mortar, electric spice grinder or blender. Grind until powdered. Squeeze the lemon and add the juice and 1 cup of water to a pan. Place steamer rack on top and place fish onto the rack. Sprinkle the fish with the green tea salt. Cover the pan and turn heat to medium. Steam fish for about 5 minutes or until just cooked through, time will vary depending on how thick the fillets are. Meanwhile in a small saucepan melt the butter with the juice of 1/2 lemon. When melted and foamy remove from stove. Place broccolini on the plate, top with a spoonful of sauce and place the fish on top.
