Ginger Garlic ShrimpThis quick and easy shrimp stir fry is based on the Indian dish, Masala Jhinga. A bright and crisp Albarino is refreshing with any tangy spicy meal. Yield: 4 servings
Ingredients2 Tablespoons vegetable oil1 onion, minced 1 tablespoon minced garlic 1 tablespoon minced fresh ginger 1 teaspoon kosher salt 1/4 teaspoon crushed red pepper 1/2 teaspoon ground cumin 1 1/2 pound large shrimp, raw, in the shell 2 fresh or canned tomatoes, chopped 2 Tablespoons parsley, chopped, optional
MethodPeel and devein the shrimp. Heat the oil in a large skillet, add onions and saute 3 minutes. Add garlic, ginger, salt, red pepper and cumin, saute for another minute. Add the shrimp and saute until just cooked through, about 3 - 5 minutes. Add the tomatoes and any juice and cook another 2 minutes loosening any bits of onion in the pan. Garnish with parsley. Serve over rice.
