Cheddar Stuffed BurgersForget the beer and enjoy wine with your burger! The rich flavors of beef and cheddar are particularly suited to this robust Bordeaux style wine. Yield: 4 servings
Ingredients1 1/2 pounds ground chuck, not extra lean1 clove garlic, very finely chopped or pressed through a garlic press 1 teaspoon Dijon mustard 1 teaspoon Worcestershire sauce 1/4 teaspoon kosher salt 1/2 - 1 teaspoon fresh ground pepper 1 cup grated sharp cheddar cheese, about 4 ounces Hamburger buns
ToppingsGreen leaf or Romaine lettuce leavesTomato slices Red onion slices
MethodIn a medium bowl combine meat, garlic, Dijon mustard, Worcestershire sauce, salt and pepper blend well. Divide meat mixture into four equal portions. Shape each into ball. Poke deep hole in each ball and fill each with half of cheese. Mold meat around cheese to enclose. Flatten burgers to 1 inch-thick patty with a slight indentation in the middle. Grill burgers to desired doneness, about 5 minutes per side for medium. Let burgers rest 5 minutes before serving on toasted buns with toppings to taste.
