Cheddar CrackersThese bite-sized nibbles are a good accompaniment to an antipasto platter. Serve with olives, sliced sausage and chunks of cheese. Yield: 8 servings, 4 dozen crackers Ingredients1 cup sharp cheddar cheese, grated6 Tablespoons butter, softened 1/2 cup cornmeal 1/4 teaspoon salt 1 teaspoon baking powder 1/4 teaspoon dry mustard 1/4 teaspoon cayenne MethodBlend all the ingredients in a food processor until crumbly and beginning to form a ball. Roll the dough into a ball and divide into two. Roll the ball into a log, about 1 1/2 inches around. Wrap each log in plastic wrap and refrigerate for 2 hour or longer. Preheat oven to 350 degrees. Grease two baking sheets or line them with parchment paper. Slice the logs into about 24 slices each. Place on baking sheet about 1/4 inch apart.
