Cheddar Crackers

Yield: 8 Servings, 4 dozen crackers
Prep Time: 2 hours | Cook Time: 12 minutes

Ingredients:

  • 1 cup sharp cheddar cheese, grated
  • 6 Tablespoons butter, softened
  • 1/2 cup cornmeal
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 teaspoon dry mustard
  • 1/4 teaspoon cayenne

Method:

  • 1.

    Blend all the ingredients in a food processor until crumbly and beginning to form a ball. Roll the dough into a ball and divide into two. Roll the ball into a log, about 1 1/2 inches around. Wrap each log in plastic wrap and refrigerate for 2 hour or longer.

  • 2.

    Preheat oven to 350 degrees. Grease two baking sheets or line them with parchment paper.

  • 3.

    Slice the logs into about 24 slices each. Place on baking sheet about 1/4 inch apart. Bake for 12 minutes or until slightly brown on the edges. Cool before serving.
