2-in-1 Fruit SaladThis fruit salad has an adult and a kid-friendly version. Yield: 8 Servings
Ingredients – Salad2 cups strawberries2 mangoes 1/2 pineapple or 1 1/2 cups cubed pineapple 4 - 6 kiwi fruit
MethodWash the strawberries and let dry on paper towels. Trim the strawberries and cut in half. Peel and slice the mango, pineapple and kiwi into chunks. Put all the fruit in a bowl and mix gently.
Ingredients – For adults2 pints lime or lemon sorbet1-2 pkg shortbread cookies, 16 cookies
MethodServe roughly 2/3 cup of the fruit salad over a scoop of lime sorbet in a small bowl and garnish with a shortbread cookie or two.
Ingredients – For kidsToothpicks, preferably frilly topped1 cup vanilla or Strawberry yogurt
MethodPlace yogurt in a small bowl and stir it to thin it into a dip consistency. Serve the fruit salad with toothpicks and yogurt dip. Let the kids skewer the fruit and dip it.
