Cava, Spain’s sparkling wine, uses the same techniques as Champagne, but they have their own, indigenous grapes which give their bubblies their own style and character: Macabeo, Viura, and Xarel-lo. Macabeo dominates the Mont-Ferrant gran Cuvée blend, which has a steely, minerally core embellished with fruity touches of apple, pear, and peach skin. It’s light-bodied and fresh, with a smooth texture.

The Mont-Ferrant Gran Cuvée goes very well with light seafood like scallops or shrimp as well as many salads. If you’re doing brunch, it’s also a great choice with omelettes.
