Give your Merlot a growing season, with soils that retain the right amount of moisture. Control your yields – that is, don’t let an individual vine produce too many grapes; otherwise the flavors get diluted and washed out. Be careful with oak-aging; give it enough to add some spice and structure, but not so much that it reeks of sawdust. And your end result is a wine like the Foggy Ridge Merlot: medium-bodied, with lots of ripe fruit – dark cherry, blackberry, black plums – and well-balanced tannins.
