Baco Gran Reserva Cabernet Sauvignon 2005
Maule Valley, Chile
The Maule Valley is Chile’s oldest wine growing region and Cabernet Sauvignon is its most successful grape. The area gets more rainfall than you’d usually want for wine grapes but the regions volcanic soils drain well, so the vines dig deep for water and minerals, making for strong, concentrated flavors in the wine. The Baco Gran Reserva shows off Cabernet’s classic blackcurrant and blackberry aromas, with touches of the chocolate and coffee notes that often characterize South American reds; a touch of smokiness graces the finish. It’s a bit over medium-bodied with moderate tannins.

Steaks and lamb make good pairings with the Baco Cabernet Sauvignon; it also goes well with stronger cheeses like a sharp Cheddar, or, for something different, try it with some dark, bittersweet chocolate.
